SMALL KITCHEN SEAFOOD PAELLA
Growing up, my mom cooked seafood paella for every single family occasion. She absolutely loved cooking it, and we loved eating it just as much. When I got married, I wanted to bring that exact same tradition and warmth into my own household. But reality quickly hit—I simply don't have the same spacious kitchen or specialized equipment that she used to command.
So, I had to compromise. Instead of a giant copper paellera over an outdoor grill, I rely on a simple, standard frying pan on a regular stove. It took some experimenting, but I found a brilliant way to cheat the system. Once the short-grain rice is beautifully cooked, seasoned, and blended with the seafood capsules, I turn the fire down to the absolute lowest setting and cover the pan completely. Trapping that final bit of heat allows the bottom layer to crisp up beautifully, giving us that prized, deeply savory tutong (socarrat) right from a small kitchen setup. It's fast, easy, and carries all those wonderful childhood memories in every single panful.

STEP BY STEP ASSEMBLY INSTRUCTIONS

The Quick Seafood Sear
Heat your oil or butter in your 2-inch deep frying pan over medium-high heat. Give your frozen shrimp and fish capsules a rapid 5-second rinse under cold water just to crack off the outer protective ice glaze. Toss them into the hot pan and sear them quickly for 1 to 2 minutes just until they get a little color. Scoop them out and set them aside on a plate. They will not be fully cooked through yet, which is exactly what we want!Toast and Season the Rice
Turn the heat down to medium. Add your dry short-grain rice directly into the savory oil left behind in the pan. Stir it around for 60 seconds to coat the grains. Sprinkle in your garlic powder, onion powder, and your kasubha (safflower), stirring well until the dry grains turn a beautiful, vibrant golden yellow. Pour your cup of passata straight over the grains and stir continuously until every single grain of rice is completely blanketed in the thick tomato base. The Chicken Stock Simmer
Pour your warm chicken stock directly over the golden, tomato-covered seasoned rice. Give it one gentle stir to distribute everything evenly, then stop stirring completely. Let it come to a boil, then turn the heat down to low. Let it simmer uncovered for about 10 to 12 minutes, until the rice has absorbed most of the liquid but is still visibly wet on top.
Assemble the Seafood & Pepper Capsules
Now, arrange your seared seafood pieces and your handful of frozen bell pepper squares neatly across the top of the rice bed. Do not mix them in—let them sit beautifully on top so they look stunning when you serve it.The Cover-and-Steam Finish
Take your frying pan lid (or a tight sheet of aluminum foil) and cover the pan completely. Let it steam on low heat for the final 5 to 7 minutes. The trapped moisture will cook your raw seafood capsules to sweet, juicy perfection while the bell peppers soften beautifully.Serve Straight from the Pan
Turn off the heat and let it rest covered for 2 minutes. Remove the lid, scatter fresh lemon wedges around the edges, and place the frying pan right on the table. Every single grain of rice carries that rich chicken stock flavor, topped with snap-frozen, pristine seafood.
