FREEZING BELL PEPPERS

Bell peppers bring incredible color, brightness, and flavor to the kitchen, but they are notorious for turning watery and wrinkled if you try to freeze them raw. If you've ever thawed a pre-made meal only to find soggy bell peppers, you know exactly what I mean.

The capsule kitchen method changes everything. Instead of forcing yourself to commit to one massive recipe, you prep your ingredients standalone. When it's time to cook, you simply mix and match your frozen capsules to make cooking easy, fast, and fun.

Prepping your bell peppers into both squares and thin strips gives you an instant shortcut to dozens of different global dishes.

UNIFORM CUTS

To keep your capsule menu highly flexible, divide your bell peppers into two specific shapes:

  • The Square (1/2-inch to 3/4-inch): Your go-to shape for building rich Filipino classics like Caldereta, or creating a beautiful weekend seafood Paella.

  • The Thin Strip: Sliced vertically, these are perfect for rapid morning breakfast hashes, fajitas, or quick beef pepper stir-fries.

1. Clean and Cut

Wash your bell peppers thoroughly. Cut them open to de-seed them and slice away the white inner ribs. Wipe away any excess water. Slice half of your peppers into uniform squares, and the other half into clean, thin vertical strips.

2. The Flash-Blanch

Bring a pot of salted water to a boiling rush. Bell peppers have very delicate cell walls, so they require barely any heat to lock in their vibrant red and green colors:

  • For the Squares: Boil for strictly 60 seconds.

  • For the Thin Strips: Boil for strictly 30 to 45 seconds.

3. The Ice-Shock

Instantly drain the peppers and plunge them into a large bowl filled with ice and water. Leave them for 2 minutes until chilled to the core. This preserves their beautiful, snappy contrast.

4. Dry Bone-Dry

Drain well, then lay the peppers flat on a clean kitchen towel. Press down gently with paper towels until they are absolutely bone dry. Eliminating surface moisture is the secret to a perfect freezer texture.

5. Flash Freeze

Arrange your squares and strips in a single layer on a parchment-lined baking sheet, making sure the pieces don't touch. Slide the tray into the freezer for 2 hours until frozen solid.

6. Separate and Package

Scoop the frozen pieces into separate airtight freezer bags labeled by cut. Squeeze out the excess air before sealing. They will remain completely loose in the bag, ready to be rationed out whenever inspiration strikes.

HOW TO COOK STRAIGHT FROM FROZEN

Never thaw your frozen bell peppers. Cook them directly from the freezer to preserve their texture:

  • Squares: Toss them directly into your simmering Caldereta or scatter them over your hot Paella rice during the final 5 minutes of cooking.

  • Thin Strips: Drop them straight into a smoking-hot skillet with a little oil for fajitas or stir-fries, searing them quickly for a gorgeous crisp-tender bite.
