HOW TO MAKE PASTRY DOUGH
Having a reliable pastry dough stashed in your freezer is one of the best kitchen shortcuts you can give yourself. Instead of kneading from scratch every single time an occasion rolls around, you can simply pull a pre-made disc from the freezer and clear the path for quick snacks, elegant holiday pies, or even a simple weekday breakfast quiche.
This is our family’s reliable, four-ingredient butter crust. It is incredibly simple to whip up in a big batch, shapes perfectly, and bakes into a beautifully flaky structure. We love adding a tiny dash of ground nutmeg to the flour mix—it doesn't make the crust sweet, but it adds a subtle, warm depth that completely elevates savory bakes. Here is exactly what we do, and I hope it helps make your baking days a little easier.
Cook and Prep Time
Prep Time: 15 minutes
Chilling Time: 30 minutes (before freezing or baking)
Total Time: 45 minutes
INGREDIENTS

All-Purpose Flour: 2 cups
Cold Butter: ½ cup (1 stick), cubed
Ice-Cold Milk: 4 to 6 tablespoons
Salt: ½ teaspoon
Ground Nutmeg: A tiny dash (our family's savory secret)
STEPS

Cut the Butter: In a large mixing bowl, combine your all-purpose flour, salt, and that tiny dash of nutmeg. Drop in the cold, cubed butter. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs with a few pea-sized butter bits left.
Bind with Cold Milk: Drizzle in the ice-cold milk, one tablespoon at a time. Toss gently with a fork just until the dough begins to pull together into a cohesive ball. Avoid overworking it so the crust stays light and flaky.
Shape and Rest: Turn the dough onto a lightly floured surface, press it gently into a flat disc shape, and wrap it tightly in plastic wrap. Refrigerate for at least 30 minutes before rolling it out.
HOW TO FREEZE AND STORE

To Freeze: Wrap your shaped dough disc tightly in two layers of plastic wrap, then place it inside a heavy-duty freezer bag. Label it with the date. It will keep perfectly in the freezer for up to 3 months.
To Thaw: When you are ready to use it for a quick snack, quiche, or pie, simply transfer the wrapped dough from the freezer to your refrigerator the night before. By morning, it will be perfectly chilled and ready to roll out smoothly on your counter.
