MASHED POTATO RECIPE
In our country—and definitely in our family kitchen—rice has always been the absolute default priority over mashed potatoes. But lately, as our generation gets older, our parents age, and toddlers start running around the house, our family dynamics have naturally shifted. Gathering for a holiday used to mean a structured, proper sit-down dinner where everyone sat neatly around a single dining table. Today, our family has grown far too large to fit in one space, and our celebrations have evolved into a lively, free-flowing "get your food and find an available spot" kind of format. Between chasing down running kids, catching up, and talking over the noise, eating has become a beautifully casual affair.
This change in our household routine actually made it incredibly convenient to reach for mashed potatoes over traditional rice. When you are balancing a plate on your lap or sitting a few feet away from a table, navigating loose rice grains while deeply immersed in a conversation can be a logistical challenge. A rich, comforting scoop of mashed potato completely fixes that. It holds everything together on the plate, allows you to overload your spoon, and honestly, you can comfortably consume it like a savory popsicle while standing up and laughing with your relatives. It is a stress-free, practical solution for a modern, bustling family gathering.
While our household strictly prefers the clean, rustic simplicity of a pure butter mash, your kitchen is entirely your own space. If you see fit and want to add your own favorite herbs and spices to match the rest of your holiday menu, you should absolutely do so. Feel free to use what works best for your family's palate!
COOK AND PREP TIME
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
INGREDIENTS

Potatoes: 3 pounds Yukon Gold or Russet potatoes (washed thoroughly, skins kept completely on)
Butter: 1 cup (2 sticks) cold unsalted butter, cut into small cubes
Seasoning: 1 ½ teaspoons fine sea salt (plus extra for the boiling water)
Spice Accent: ½ teaspoon ground white pepper or finely cracked black pepper
In our kitchen, we always reach for a block of unsalted Kerrygold for this specific mash. Because it has a higher fat content and less water than standard commercial blocks, it melts beautifully into a smooth emulsification instead of making the potatoes gummy. (For ease, I've linked our grocery staple below, but feel free to use whatever unsalted block you have in your fridge!)
STEP-BY-STEP INSTRUCTIONS

The Shielded Boil: Place your thoroughly washed, whole, skin-on potatoes into a large pot. Cover them completely with cold water and add a generous handful of salt. Bring the pot to a rolling boil over high heat, then lower it slightly to a steady simmer. Let them cook undisturbed for about 20 to 25 minutes. To check if they are ready, slide a sharp paring knife straight into the center of the largest potato—if it slides through effortlessly with no resistance, they are good to go.
The Clean Peel: Drain the boiling water completely from the pot. Do not run the potatoes under cold tap water or wash them to cool them down, as introducing cold water at this stage will water-log the open starches and ruin the texture. Instead, work while they are still steaming and piping hot. Hold each potato using a clean, dry kitchen towel to protect your hands, and gently peel back the skin. Because they were boiled whole, the jackets will slide off easily in large pieces. Discard the skins and place the hot, dry potatoes directly into a large mixing bowl.
The Velvet Finish: Begin mashing your dry, steaming potatoes immediately while the starch is soft and cooperative. Instead of melting your butter beforehand, drop your cold, diced butter cubes directly into the hot potatoes a handful at a time while mixing thoroughly. The residual heat from the potatoes will melt the fat slowly, allowing it to coat the starch grains evenly. Add your salt and white pepper, and continue to blend until all the butter blocks are fully emulsified, turning the mixture into a rich, glossy, and perfectly smooth velvet texture.
