HOW TO MAKE LECHE FLAN
Leche flan is a complete mainstay on our holiday table. It's a familiar, deeply comforting flavor that we all love, and I'm sharing our recipe here hoping you learn to love it too.
I like eating flan but can be quite picky about the texture, and it's a dessert I rarely order when eating out because a lot of versions can lean a bit spongy or get riddled with tiny air bubbles. My mom’s version has absolutely no bubbles, and it's the one we look forward to every single year.
While condensed milk is usually the standard choice for building the custard base, our family recipe uses whole cream instead to create a velvet-smooth richness.
We handle the mixing by whisking our fine Peotraco sugar directly into the egg yolks, which creates a flawless flavor foundation. We also swap out the standard vanilla extract for a generous splash of rum because that's just what we do in our kitchen—it lends an incredible warmth to the custard that pairs beautifully with the caramelized sugar. It is a very straightforward, rewarding process, and I hope you like our version.
COOK AND PREP TIME
Prep Time: 15 minutes
Cook Time: 45 minutes (includes caramelizing and 30–35 minutes of steaming)
Total Time: 60 minutes
INGREDIENTS

10 Large Egg Yolks
2 cups Whole Cream
¾ cup Peotraco Sugar (or fine baker's caster sugar)
1 cup White Sugar (for the caramel base)
1 tbsp Fresh Lemon Juice
1 strip of Fresh Lemon Rind (yellow part only)
1 tbsp Rum (for the caramel)
2 tbsp Rum (for the egg yolks)
Water for your steamer setup
STEP BY STEP INSTRUCTIONS

1. The Aromatic Rum-Lemon Caramel
Place your white sugar, fresh lemon juice, and 1 tablespoon of rum directly into your llanera (or a small, heavy-bottomed pan) over medium-low heat. Let the sugar melt slowly without stirring until it dissolves and turns a deep, warm amber color. Drop your fresh strip of lemon rind straight into the bubbling syrup during the last 30 seconds to let the heat draw out those fragrant citrus oils. Swirl the pan gently to coat the bottom completely, then remove from the heat and let the caramel cool and harden into a glossy shell.
2. The Sugar and Yolk Ribbon Base
Place your 10 egg yolks and your Peotraco sugar straight into a clean mixing bowl. Add your remaining 2 tablespoons of rum. Use a spatula or spoon to mix them together gently using a slow, steady circular motion until the fine sugar is fully incorporated and the yolks form a smooth, pale ribbon base.
3. Gently Incorporate the Cream
Slowly pour your whole cream directly into the bowl with the sweet yolk mixture. Continue stirring in a calm, steady circle until the cream is completely combined. Crucial Rule: Do not beat, shake, or whip the mixture aggressively. Whipping forces massive pockets of air into the dairy, which guarantees a bubbly, ruined texture during the cook. Keep your movements entirely relaxed.
4. The Fine-Mesh Bubble Filter
Set an extremely fine-mesh strainer over a clean bowl or a large glass measuring beaker. Pour your raw custard mixture slowly through the strainer. This essential step catches any stray chalazae or undissolved egg bits, filtering out hidden micro-bubbles and ensuring your liquid base is perfectly smooth and uniform before it meets the caramel.
5. The Slow Llanera Transfer
Position your llanera with the hardened rum-lemon caramel on a flat surface. Hold your beaker close to the rim and pour the strained custard into the mold incredibly slowly. A fast, heavy pour will create friction and introduce fresh air bubbles right at the bottom. Once filled, tap the llanera gently on your counter to release any surface tension, then cover the top tightly with a sheet of aluminum foil to shield it from stray water droplets.
6. The Gentle Steam Finish
Place your covered llaneras into your steamer setup over low heat (or use the steamer attachment on your rice cooker). Alternatively, you can place them into a water bath inside a toaster oven preheated to 325°F (160°C). Let it steam gently for 30 to 35 minutes. Check the flan by giving the mold a soft nudge—the center should have a slight, uniform jiggle but feel set to the touch.
7. The Chiller Set & Flip
Remove the flan from the steamer and let it cool completely to room temperature. Leave the foil on and slide it into the chiller for at least 4 hours (or overnight) so the dense matrix sets rock-solid. To serve, run a thin knife carefully around the inside edge, place a flat serving plate over the top, and firmly flip it upside down. The liquid rum-lemon caramel will cascade beautifully over the mirror-smooth, bubble-free flan.
