BACON-WRAPPED EMBUTIDO RECIPE
This bacon-wrapped breakfast embutido combines classic Filipino comfort with high-efficiency kitchen logistics. By wrapping the seasoned meat log in a tight layer of smoky bacon, you create a natural moisture barrier that protects the protein structure during processing, ensuring a ridiculously juicy slice.
The architecture here is completely modular. While this recipe is optimized for our signature, zero-liquid Ground Pork Master Mix, you can seamlessly refer to my foundational Master Beef Emulsion recipe if you prefer an equally flexible, neutral beef base instead.
Injected with sweet green peas and a solid, savory core of Edam cheese—widely available globally and known culturally in the Philippines as Queso de Bola—this firm dairy block brings a beautiful, sharp saltiness that cuts through the rich pork. Edam softens into a velvety paste under steam but holds its structural shape flawlessly, respecting our strict zero-liquid rule and ensuring a perfectly clean slice.
COOK & PREP TIME
Prep Time: 20 minutes
Cook Time: 45 minutes (if steaming upfront)
Yield: 2 large, sliceable breakfast rolls
Core Tool: A bamboo sushi rolling mat (Makisu) wrapped tightly in cling wrap.
INGREDIENTS
1kg Pre-Portioned Meat Emulsion (Use your Ground Pork Master Mix)
1/2 cup pre-preserved green peas (drained thoroughly)
1 block Edam cheese, sliced lengthwise into thick, uniform strips
10 to 12 strips thick-cut smoky bacon
A small bowl of cooking oil (for brushing the rolling mat)
Aluminum foil sheets (for wrapping and sealing)
THE OVERNIGHT DEFROST AND PEA MIX
The evening before you plan to assemble your rolls, transfer your pre-portioned container of cold meat emulsion from your vertical freezer cabinet down to your chiller to thaw slowly overnight. In the morning, empty the thawed meat into a cold mixing bowl, drop in your thoroughly drained green peas, and fold them cleanly throughout the matrix until completely integrated.
THE SUSHI MAT PREP
Cover your bamboo sushi roller completely and tightly in a clean layer of plastic cling wrap. This protects the wood and ensures a flawless, non-stick surface. Using a pastry brush, lightly brush the plastic surface with a thin layer of cooking oil.
THE BACON FOUNDATION
Lay down your strips of bacon vertically across the oiled sushi mat, slightly overlapping the edges of each strip. This forms a continuous, woven smoky blanket that will completely seal your meat emulsion.
THE MAKI STYLE LAYERING
Take a portion of your cold, pea-infused meat emulsion and gently press and flatten it directly over the bacon layer, leaving a clean 1-inch border at the top and bottom edges (exactly like flattening sushi rice over a nori sheet).

THE EDAM CHEESE CORE
Place your thick strips of Edam cheese horizontally in a neat, solid line right along the lower edge of the meat layer closest to you.
THE ROLL TECHNIQUE
Using both hands, lift the lower edge of the bamboo sushi mat. Roll it forward firmly, pressing inward as you turn to guide the bacon and meat emulsion over the central cheese strips. Continue rolling forward with steady pressure until a tight, uniform cylinder is formed. Gently slide the completed, bacon-wrapped log off the plastic mat.
THE FOIL SEAL
Place the log onto a sheet of heavy-duty aluminum foil. Wrap it tightly, rolling it into a snug cylinder. Twist and fold the foil ends firmly like a candy wrapper to lock in the shapes and prevent any potential leakage. Repeat the entire process for your second log.
COOK & FREEZE
Place the foil-wrapped logs into a steamer and steam over boiling water for 45 minutes. Let them cool completely at room temperature, then place them in the refrigerator to firm up before transferring them to your vertical freezer stack. On busy weekdays, simply cut thick slices and flash-fry them in a hot skillet for 60 seconds per side until the bacon edges get beautifully crisp.
