CRISPY CHILI GARLIC RECIPE

Crispy Chili Garlic is one of my favorite toppings. Growing up, my mom frequently made jars of it for our kitchen, and I loved watching her move around the stove, handling the hot oil and aromatics. This recipe is my mom's exact method, pieced together entirely from years of careful observation and watching her cook.

1. The Bitter-Flavor Soak and Mince
Place your peeled whole garlic cloves into a small bowl and pour in the half cup of water. Let them sit and soak for 10 minutes. This essential step leaches out the harsh, pungent compounds that cause garlic to turn bitter or metallic when fried. Drain the cloves thoroughly, pat them dry with a clean kitchen towel, and then finely mince them into tiny, uniform bits.

2. Pan 1: The Initial Aromatic Fry
Heat ½ cup of cooking oil in your first pan over low heat. Add the minced garlic bits. Sauté gently for 3 to 5 minutes, stirring continuously. This step gently cooks off the remaining raw bite of the garlic and allows the soaked moisture to begin evaporating as steam. You want the kitchen to smell incredible, but ensure the garlic remains pale and does not change color or brown at this stage.

3. The Cool and Strain Separation
Using a fine-mesh strainer or a slotted spoon, lift the softened garlic bits completely out of the first pan. Let the garlic cool down and strain off any excess surface oil. This temporary temperature reset halts the cooking process, stabilizing the garlic structure before it hits the high heat.

4. Pan 2: The Final Deep-Fry Finish
In a separate, deeper pan, heat the remaining 1 cup of cooking oil over medium-low heat until it is warm but not smoking. Drop your cooled, strained garlic bits directly into the oil, and immediately add the dried chili flakes and salt. Bring the mixture to a low, steady deep-fry bubble. Cook for 5 to 7 minutes, stirring occasionally, as the remaining moisture fully dehydrates. The bubbles will slow down dramatically as the garlic turns a perfect golden-brown and the oil blooms into a deep, rich burgundy. Turn off the heat completely and let it cool in the pan to achieve a shatteringly crisp texture before transferring it to a sterilized glass jar.

💡 Homemaker's Note on Storage: Because this double-frying method completely dehydrates the garlic and removes every trace of water from the oil, this crunch topping is entirely shelf-stable. Keep the jar sealed tightly on a cool, dry pantry shelf to preserve that loud, clean crunch for weeks.
