In regional markets today, you can still see these golden, par-fried slabs hanging securely under mesh covers, air-drying naturally in the open breeze.

Because the liquid is completely driven out during the initial stages, the resulting slabs become incredibly stable. Families traditionally used these prepared pieces as an essential, savory foundation for their everyday meals, slicing off chunks to add flavor and a rich texture to their daily cooking.

For a high-efficiency home setup, this method serves as an excellent high-yield masterpiece. You can complete the prep, run the first fry, and store the blocks safely for weeks. When a sudden need arises, a frozen block can go straight into hot oil for a five-minute dinner, or be chopped up to elevate your standard base dishes.

  3. The Overnight Chill: Arrange the slabs skin-side up on a wire rack placed inside a shallow tray. Position it inside your refrigerator completely uncovered overnight. The cold, circulating air will naturally dry out the skin layer until it reaches a dry, parchment-like texture.

  2. The Storage Phase: Remove the pork and allow it to cool down to room temperature.   1. The Flash Fry: Do not thaw the meat. Take a solid frozen slab straight from storage. Heat your cooking oil in a pan until it is screaming hot (375°F / 190°C).

  2. The Crisp Finish: Carefully lower the frozen block into the hot oil. The moisture locked inside the dried skin layers will instantly expand into steam, forcing the exterior to blister and crisp up beautifully. Flash-fry for 3 to 5 minutes until the entire surface turns a deep golden brown. Slice and serve immediately.
